This is a useful way to make a delicious savoury rice dish with leftovers.
ingredients

45 ml (3 tbsp) vegetable oil
1 large onion, peeled and finely chopped
225 g (8 oz) cooked long-grain rice
salt and freshly ground pepper
15 ml (1 tbsp) soy sauce
50 g (2 oz) cooked ham, chopped
25 g (1 oz) bamboo shoots
50 g (2 oz) cooked shrimps
method
1. Heat the oil in a large frying pan. Cook the onion over a medium heat until it is a pale golden colour.
2. Add the long-grain rice and stir in with the onion. Season well.
3. Stir in the soy sauce, ham, bamboo shoots and shrimps.
4. Cook until golden brown. Taste for flavour. Add more soy sauce, vegetables, meat or fish if necessary.
