50 ml (2 fl oz) lemon juice
2.5 g (1/2 tsp) ground ginger
2.5g (1/2 tsp) finely chopped garlic
pinch of ground cumin
2.5 g (1/2 tsp) paprika
pinch of cayenne pepper
pinch of ground turmeric
2.5 g (1/2 tsp) salt
225 ml (8 fl oz) white wine
1.5 kg (3 lb) flounder fillets
method
1. Preheat the oven to 190°C (375°F) Gas 5.
2. In a small mixing bowl, combine all the ingredients except the flounder fillets. Mix well.
3. Arrange the fillets in a large baking dish and pour the sauce over them.
