1. Soak the matzos in water for 3 - 5 minutes or until soft. Drain well.
2. In a large mixing bowl, combine the softened matzos, eggs, salt, pine kernels, sultanas and lemon rind. Mix well.
3. Heat the butter in a large heavy frying pan over a low heat. Pour in the omelette mixture and cover.
4. Cook for 5 minutes or until the omelette is just set. Sprinkle with the sugar and cinnamon.
5. Fold the omelette in half and serve immediately.
