Serve this dip in a small bowl as an accompaniment to spring rolls or meat dishes.
ingredients
makes 150 ml (1/4 pint) 2/3 cup
1 - 2 small fresh red chillies, seeded and finely chopped
1 garlic clove, crushed
15 ml (1 tbsp) roasted peanuts
60 ml (4 tbsp) coconut milk
30 ml (2 tbsp) fish sauce
juice of 1 lime
10 ml (2 tsp) sugar
5 ml (1 tsp) chopped fresh coriander
method
Pound the chilli or chillies with the garlic in a mortar with a pestle.
Add the peanuts and pound until crushed. Add the coconut milk, fish sauce, lime juice, sugar and coriander. Mix well.
