1. Preheat the oven to 200°C (400°F) Gas 6. Peel, halve and core the pears. Cut them into slices Heat the butter in a pan and add the pear slices. When the fruit has softened, raise the heat a little, break up the fruit with a wooden spoon and cook until mushy.
2. Put the contents of the pan into a blender. Blend until smooth and add honey and cinnamon to taste. Pour into a bowl and beat in the egg yolks.
3. Butter a 1.75 - 1/3 pt souffle dish.
4. Whisk the egg whites until they form soft peaks and fold into the mixture.
5. Pour into the souffle dish and bake in the preheated oven for 20 - 25 minutes until just golden brown and nearly set.
