Chinese Sprouts

If you are bored with plain boiled Brussels sprouts, try pepping them up with this unusual stir-fried method, which uses the minimum of oil.
Brussels sprouts are rich in vitamin C, and this is a good way to cook them to preserve the nutrients. Larger sprouts cook particularly well by this method, and cabbage can be cooked in the same way.

ingredients

serves 4
450 g (1 lb) Brussels sprouts
5 ml (1 tsp) sesame or sunflower oil
2 spring onions, sliced
2.5 ml (1/2 tsp) Chinese five-spice powder
15 ml (1 tbsp) light soy sauce

method

1. Trim the Brussels sprouts, then shred them finely using a large sharp knife or shred in a food processor.

2. Heat the oil in a preheated wok or frying pan and add the sprouts and onions, then stir-fry for 2 minutes, without browning.

3. Stir iri the five-spice powder and soy sauce, then cook, stirring, for a further 2 - 3 minutes,' until just tender.

4. Serve hot, with grilled meat or fish or with Chinese dishes.
