Satay Sauce

There are many versions of this tasty peanut sauce. This one is very speedy and it tastes delicious drizzled over grilled or barbecued skewers of chicken. For parties, spear chunks of chicken with cocktail sticks and arrange around a bowl of warm satay sauce.

ingredients

serves 4
200 ml (7 fl oz) scant 1 cup coconut cream
60 ml (4 tbsp) crunchy peanut butter
5 ml (1 tsp) Worcestershire sauce
few drops of Tabasco sauce
fresh coconut, to garnish (optional)

method

1. Pour the coconut cream into a small saucepan and heat it gently over a low heat for about 2 minutes.

2. Add the peanut butter and stir vigorously until the mixture is thoroughly blended. Continue to heat, but do not allow to boil.

3. Add the Worcestershire sauce and Tabasco sauce to taste. Pour into a serving bowl.

4. Use a potato peeler to shave" thin strips from a piece of fresh coconut, if using. Scatter the coconut over the sauce and serve immediately.
