Sea Bass with Ginger and Spring Onions

ingredients

serves 3-4
1 medium sea bass, cleaned
pinch each of salt and sugar
1 tablespoon sesame oil
1 tablespoon soy sauce
1 bunch spring onions
2 large cloves garlic
2 (3 1/2 cm)1 1/2 in pieces of fresh root ginger

for the garnish

6 spring onions
lime slices

method

1. Rub the sea bass with the salt, sugar, sesame oil and soy sauce.

2. Chop the spring onions, garlic and ginger, and put half of these ingredients in a layer on the bottom of a lightly greased sheet of aluminium foil.

3. Place the sea bass on top, and cover with the remaining mixture.

4. Parcel up loosely, and bake in a moderate oven 180°c (350°f) gas 4 for 20 minutes or until tender.

5. Serve with a garnish of frilled spring onions and slices of lime in its own cooking juices.
