Date Jam

ingredients

makes approx. 2.25 kg (4 1/2 lb)
1 kg (2 lb) stoned dates
725 ml (1 1/4 pt) water
1 kg (2 lb) preserving sugar
5 g (1 tsp) ground cinnamon
5 g (1 tsp) ground nutmeg
grated peel and juice of 1 lemon
30 g (2 tbsp) unsalted butter

method

1. Bring the dates and water to the boil. Simmer gently for 10 minutes.

2. Add the remaining ingredients and continue to cook, stirring all the time.

3. When the mixture is thick and smooth, take it off the heat.

4. Pack into sterilized, warmed jars and cover.

Unusual and delicious. loved the lemon and spice flavour

I tried it and when it waa boiling the dates diddnt get mushy for a long time.
