This mixture of fish stuffed with dates may seem odd, but it is very tasty.
ingredients

75 g (3 oz) cooked rice
65 g (2 1/2 oz) chopped almonds
50 g (2 oz) sugar
100 g (4 oz) butter
2.5 g (1/2 tsp) ground ginger
salt to taste
black pepper to taste
225 g (8 oz) dates, stoned
3 kg (6 lb) firm, white-fleshed fish, cleaned
1 onion, sliced
10 g (1 tbsp) cinnamon
method
1. Preheat the oven to 175°C (350°F) Gas 4.
2. Combine the rice, almonds, sugar, 25 g (1 oz) of the butter, ginger, salt and pepper in a mixing bowl. Mix well.
3. Stuff the dates with the mixture and close the openings with toothpicks.
4. Pack the cavity of the fish with the stuffed dates.
5. Grease a large baking dish with the remaining butter.
6. Put the fish in the dish and top with the onion slices.
7. Bake until the fish flakes easily with a fork, about 25 to 30 minutes.
8. Remove the dates from the fish and arrange the fish on a serving platter.
9. Arrange the dates around the fish and dust with the cinnamon.
