1. Heat the oil in a frying pan over medium high heat and fry the sliced onion for 3 - 4 minutes until lightly browned.
2. Add turmeric, chilli, salt and sugar and, stirring constantly, fry for another 2 - 3 minutes.
3. Add the eggs and mix until well covered with the spices.
4. Add the water, bring to the boil, lower heat, cover and cook for about 10 minutes until the gravy thickens.
