1. Cream the butter and sugar together until light and fluffy.
2. Beat in the melted chocolate and blend in the chestnut puree and sherry.
3. Pile the mixture into the centre of individual dessert dishes and form into mountain shapes and chill.
4. Spoon or pipe a capping of whipped cream on the summit.
5. Decorate the base with ratafia biscuits and glace chestnuts.
6. Sprinkle with grated chocolate if you wish.
