method
1. Melt the chocolate and butter in a bowl over a pan of hot water. Stir in the cream and essence.
2. Remove from the heat and stir in the walnuts, marshmallows and icing sugar.
3. Spread in a 20cm/8in square pan, lined with nonstick (waxed) paper, and chill until firm.
4. Melt the plain chocolate. Using a piping bag fitted with a plain nozzle, drizzle the chocolate over the fudge.
5. Leave to set, then cut the fudge into diamonds or any other shape that takes your fancy.
