Java Jam recipe

ingredients

450 g (1 lb) bananas, sliced
600 ml (1 pt) orange juice
600 ml (1 pt) sweetened black coffee
300 g (10 oz) soft brown sugar
50 g (2 oz) vanilla sugar or white sugar

method

1. Put all ingredients into a pan and bring to the boil.

2. Reduce the heat and cook gently, stirring frequently to prevent burning, until the mixture softens and becomes thick.

3. Spoon into sterilized jars and cover.

serving amount

makes approx. 1 kg (2 lb)

Very unusual flavour, slightly reminiscent of Christmas Pudding.
