Spring Tomato Soup

ingredients

serves four
1 jar of passata, about 1/2 litre (20 fl oz)
2 or 3 ripe tomatoes
Bunch spring onions
1 - 2 tablespoons oil, sunflower or safflower
Pinch sugar
salt and pepper
Pinch mint fresh or dried

method

1. Method Trim the spring onions, cut the white bits off, chop finely, put into a large saucepan and fry gently in the oil until pale gold.

2. Cut the green bits into 1-inch (2.5 cm) pieces and put to one side.

3. Chop up the tomatoes, put them in with the onion white bits, add the passata, season generously with salt and pepper, add a pinch of sugar, bring it to the boil and simmer for 10 minutes.

4. Add the chopped green bits from the spring onions and the mint, pour into a liquidiser or food processor and whizz for a few seconds, then serve.

5. It is rich red in colour with green flecks, and tastes quite delicious!
