Solomon Gundy (Soused Herrings)

ingredients

serves 4
8 herrings, filleted
scant 5 g (1 tsp) salt
freshly ground pepper
5 g (1 tsp) whole allspice
8 peppercorns, slightly crushed
bay leaf
300 ml (1/2 pt) vinegar
300 ml (1/2 pt) water

method

1. Fillet the herrings or ask the fish shop to do this for you.

2. Season the inside of the washed herrings.

3. Roll each fish from head to tail and secure with a wooden cocktail stick or toothpick.

4. Arrange fish in a baking dish or casserole.

5. Put the remaining ingredients in a saucepan, bring to the boil and simmer for 5 minutes, then allow to cool slightly.

6. Pour over the fish and bake in the oven at 170°C (325°F) Gas 3, covered either with foil or a lid, for about 1 hour.

7. Allow to cool in the liquid and serve with a green salad.
