350 g (12 oz) lamb, finely minced
15 g (2 tbsp) coriander leaves, finely chopped
5 g (1 tsp) salt
2 - 3 green chillies, finely chopped
3 cloves garlic, crushed
30 g (3 tbsp) onion, finely chopped
45 ml (3 tbsp) lemon juice
1 egg, beaten
4 hard-boiled eggs
oil for deep frying
1. Mix the minced lamb well with the coriander, salt, chillies, garlic, onion, lemon juice and the beaten egg, and divide into 4 portions.
2. Wrap each portion round a hard-boiled egg, making sure the egg does not show through at any point.
3. Deep fry over a medium high heat for about 4 - 5 minutes until nicely browned.
4. Cut in half lengthwise to serve.
