Tea Granita

ingredients

20 g (2 tbsp) tea leaves (Orange Pekoe, Darjeeling, Ceylon, rosehip or any other kind)
45 g (3 tbsp) sugar
30 ml (2 tbsp) lemon or lime juice
600 ml (1 pt) boiling water

method

1. Combine the tea leaves, sugar and juice.

2. Pour over the boiling water, mix well and leave until cold.

3. Strain and freeze as for granita.

Variation
Infuse mint leaves or lemon balm in the tea while it is cooling. Strain before freezing. Pour a measure of Creme de Menthe over the granita before serving.
