Tomato Cocktail

ingredients

serves 4
3 - 4 medium (450 g) 1 lb ripe tomatoes, skinned
300 ml (1/2 pt) yoghurt
fresh basil
salt and pepper
pinch sugar
2 ice cubes

method

1. Halve the tomatoes, squeeze out the seeds (reserve them for use in a soup) and put the flesh in a blender, together with the remaining ingredients.

2. Blend everything together well and serve immediately in tall glasses, garnished with extra basil.
