Salmon and Chive Cocottes

ingredients

serves 4
butter
175 g (6 oz) cooked salmon, boned
50 g (2 oz) Cheddar cheese
2 egg yolks
300 ml (1/2 pt) single cream
7 g (1 tbsp) snipped chives
salt and freshly ground pepper

method

1. Butter 4 small individual dishes.

2. Skin and flake the salmon and divide among the dishes.

3. Mix together the cheese, eggs, egg yolks, cream and chives.

4. Season, then pour over the salmon in the dishes.

5. Place in a roasting pan half-filled with hot water.

6. Bring to the boil on top of the stove, then bake in the heated oven at 190°C (375°F) Gas 5. for 15 minutes or until firm to the touch.

7. Either serve at once, or leave to cool.
