Oysters a l'Americaine

ingredients

serves 4
24 oysters
100 g (4 oz) fresh breadcrumbs
50 g (2 oz) butter
freshly ground black pepper
100 g (4 oz) Gruyere cheese, grated

method

1. Remove the oysters from the shell and wash the deep shells throughly.

2. Drain and wipe the oysters on kitchen paper towels.

3. Fry half the breadcrumbs in melted butter until golden brown.

4. Sprinkle a few fried breadcrumbs in the bottom of the 24 deep shells. Season with pepper.

5. Return oysters to prepared shells, sprinkle with a mixture of breadcrumbs and Gruyere cheese and brown in the oven at 220°C (425°F) Gas 7.

6. Serve immediately.
