method
1. Cut the grapefruit into small chunks.
2. Make up the jelly according to the instructions, using 50 ml (2 fl oz) less water than the packet says.
3. Pour half the jelly into a bowl and leave to cool before mixing with the cream cheese until smooth.
4. Add the grapefruit.
5. Pour the mixture into a moistened small ring mould and refrigerate until set.
6. Spoon on the remaining jelly (which should not set if you have left it out of the refrigerator; if it does, melt it gently and spoon over the set jelly when cooled).
7. Refrigerate until set. Unmould before serving.
