Sprats Boursin

ingredients

serves 4
salt and freshly ground black pepper
450 g (1 Ib) sprats, cleaned and boned
1 (142 g (5 oz) packet Boursin cream cheese,
softened flour for dusting

method

1. Season the sprats, spread the insides with the cheese and fold over to reshape the sprat.

2. Dust lightly in flour then place on the oiled rack of the barbecue, turning once.

3. Cook for a few minutes on each side. You can remove the heads from the sprats before cooking, if wished.
