Spiced Honey Chicken Wings recipe

information

Be prepared to get very sticky when you eat these stir-fried wings, as the best way to enjoy them is by eating them with your fingers. Provide individual finger bowls for your guests.

ingredients

1 red chilli, finely chopped
5 ml (1 tsp) chilli powder
5 ml (1 tsp) ground ginger
rind of 1 lime, finely grated
12 chicken wings
60 ml (4 tbsp) sunflower oil
15 ml (1 tbsp) fresh coriander, chopped
30 ml (2 tbsp) soy sauce
50 ml (3 1/2 tbsp) clear honey
lime rind and fresh coriander sprigs, to garnish

method

1. Mix the fresh chilli, chilli powder, ground ginger and lime rind together. Rub the mixture into the chicken skins and leave for at least 2 hours to allow the flavours to penetrate.

2. Heat a wok and add half the oil. When the oil is hot, add half the wings and stir-fry for 10 minutes, turning regularly until crisp and golden. Drain on kitchen paper. Repeat with the remaining oil and chicken wings.

3. Add the coriander to the hot wok and stir-fry for 30 seconds, then return the wings to the wok and stir-fry for 1 minute.

4. Stir in the soy sauce and honey, and stir-fry for 1 minute. Serve the chicken wings hot with the sauce drizzled over them and garnished with lime rind and coriander sprigs.
