1. Wash the lentils thoroughly and put into a saucepan with just enough water to cover. Bring to the boil and cook until soft but not mushy. Drain and set aside.
2. Heat the oil in a preheated wok. Add the onion seeds and fry until they begin to pop. Add the onions and fry until they are golden brown. Lower the heat and add the ground fenugreek, ginger, garlic, chilli powder, ground turmeric and ground coriander.
3. Slice the mango, then add with the okra. Stir well and add the red chillies and fresh coriander. Stir-fry for about 3 minutes or until the okra is well cooked. Stir in the cooked lentils and sliced tomato, then cook for a further 3 minutes. Serve immediately.
