Crispy pieces of pork with fleshy lychees make an unusual stir-fry that is ideal for a dinner party.
ingredients
450 g (1 lb) fatty pork, such as belly pork
30 ml (2 tbsp) hoi-sin sauce
4 spring onions, sliced
175 g (6 oz) lychees, peeled, stoned and cut into slivers
salt and ground black pepper
fresh lychees and fresh parsley sprigs, to garnish
method
1. Cut the pork into bite-sized pieces.
2. Pour the hoi-sin sauce over the pork and marinate for 30 minutes.
3. Heat the wok, then add the pork and stir-fry for 5 minutes until crisp and golden. Add the spring onions and stir-fry for a further 2 minutes.
4. Scatter the lychee slivers over the pork, and season well with salt and pepper. Garnish with fresh lychees and parsley, and serve.
