1. Finely chop the mushroom stalks and mix with the spring onions, garlic and oyster sauce.
2. Stir in the diced, marinated tofu and sweetcorn, season well with salt and pepper, then spoon the filling into the mushrooms.
3. Brush the edges of the mushrooms with the sesame oil. Arrange the stuffed mushrooms in a baking dish and bake in a preheated oven at 200°C ( 400°F) Gas 6 for 12 - 15 minutes, until the mushrooms are just tender, then serve at once.
