Tasty Toasts

These crunchy toasts are excellent served as part of a weekend brunch. They are especially delicious served with grilled tomatoes.

ingredients

makes 8
4 eggs
300 ml (1/2 pint) 1 1/4 cups milk
2 fresh green chillies, finely chopped
30 ml (2 tbsp) chopped fresh coriander
75 g (3 oz) Cheddar or mozzarella cheese, grated
4 slices bread
salt and freshly ground black pepper
corn oil, for frying

method

1. Break the eggs into a medium bowl and whisk together. Slowly add the milk and whisk again. Add the chillies, chopped coriander and cheese and season with salt and pepper.

2. Cut the bread slices in half diagonally and soak them, one at a time, in the egg mixture.

3. Heat the oil in a frying pan and fry the bread triangles over a medium heat, turning them once or twice, until they are golden brown.

4. Drain off any excess oil as you remove the toasts from the pan and serve immediately.
