Stir-frying is one of the best ways to cook with the minimum of fat. This recipe is ideal for people trying to lose weight, those requiring a low-fat and low-cholesterol diet or, in fact, anyone who wants to eat healthily.
ingredients
450 g (1 lb) lean rump, fillet or sirloin steak, cut into thin strips
finely grated rind and juice of 1 orange
15 ml (1 tbsp) light soy sauce
5 ml (1 tsp) cornflour
2.5 cm (1 in) fresh root ginger, finely chopped
10 ml (2 tsp) sesame oil
1 large carrot, cut into matchstick strips
2 spring onions, thinly sliced
rice noodles or boiled rice, to serve
method
1. Place the steak strips in a bowl and sprinkle over the orange rind and juice. Set aside to marinate for about 30 minutes.
2. Drain the liquid from the steak and reserve. Mix together the steak, soy sauce, cornflour and ginger.
3. Heat the oil in a preheated wok or large frying pan, then add the steak and stir-fry for 1 minute, until lightly coloured. Add the carrot and stir-fry for a further 2 - 3 minutes.
4. Stir in the spring onions and reserved marinade liquid. Cook, stirring constantly, until boiling and thickened.
5. Serve hot with rice noodles or plain boiled rice.
