Oriental Beef

This sumptuous stir-fried beef melts in the mouth, and is perfectly complemented by the delicious crunchy relish.
Dark soy sauce has a stronger, more robust flavour than light soy sauce. It is particularly useful for imparting a rich, dark colour to meat dishes.

ingredients

serves 4
450 g (1 lb) rump steak
15 ml (1 tbsp) sunflower oil
4 whole radishes, to garnish

for the marinade

2 cloves garlic, crushed
60 ml (4 tbsp) dark soy sauce
30 ml (2 tbsp) dry sherry
10 ml (2 tsp) soft dark brown sugar

for the relish

6 radishes
10 cm (4 in) piece cucumber
1 piece stem ginger

method

1. Cut the beef into thin strips. Place in a bowl.

2. To make the marinade, mix together the garlic, soy sauce, sherry and sugar in a bowl.

3. Pour it over the beef and leave to marinate overnight.

4. To make the relish, chop the radishes and cucumber into short matchsticks, then cut the ginger into small rnatchsticks. Mix thoroughly together in a bowl.

5. Heat a wok, then add the oil. When the oil is hot, add the meat and the marinade and stir-fry for 3 - 4 minutes. Serve with the relish, and garnish with a whole radish on each plate.
