1. Cut each prawn in half lengthways.
2. Mix with a pinch of salt and about 5 ml (1 tsp) of the rice wine, egg white and cornflour paste.
3. Cut the broccoli heads into florets; remove the rough skin from the stalks, then slice the florets diagonally into diamond-shaped chunks.
4. Heat the oil in a preheated wok and stir-fry the prawns for about 30 seconds. Remove with a slotted spoon and drain thoroughly.
5. Pour off the excess oil, leaving 30 ml (2 tbsp) in the wok. Add the broccoli and spring onion, stir-fry for about 2 minutes, then add the remaining salt and the sugar, followed by the prawns and stock or water. Add the soy sauce and remaining rice wine or sherry. Blend well, then finally add the sesame oil and serve.
