method
1. Slash the flesh of the chicken quarters several times.
2. Finely chop the shallots and set aside.
3. Pound the garlic, ginger, lemongrass and chilli powder together.
4. Mix with soy sauce, hoisin sauce and oil and pour onto the chicken pieces.
5. Leave to marinate for 30 minutes.
6. Heat oil in a wok, fry the onions without browning, lift the chicken pieces out of the marinade and fry on both sides to seal.
7. Reduce the heat, cook for 10 minutes.
8. Transfer to the barbecue to complete cooking.
9. Add the marinade to the remaining ingredients in the pan.
10. Fry, then add stock. Cook for 5 minutes and serve this sauce with the chicken.
