Boeuf Dijonnaise

You may be able to buy fillet ends, which are much cheaper than the better end of the fillet and will do perfectly well for this type of dish.

ingredients

serves 4 - 6
30 ml (2 tbsp) oil
1 large onion, sliced
675 g (1 1/2 lb) fillet of beef (Tenderloin Steak), cut into strips
15 g (1 tbsp) seasoned flour
300 ml (1/2 pt) beef stock
30 ml (2 tbsp) Dijon mustard
150 ml (1/4 pt) yoghurt

method

1. Heat the oil, add the onion and cook until it has softened but not browned.

2. Pass the beef strips through the seasoned flour and then brown them lightly.

3. Add the stock and mustard to the pan, stirring well. Cover and simmer for 15 minutes.

4. Stir the yoghurt in and gently warm it through.

5. Serve with rice and salad.
