Barbecued Ribs of Beef

ingredients

serves 6 - 8
15 ml (1 tbsp) vegetable oil
1.5 kg (3 lb) beef ribs, cut into 2 in pieces
5 g (1 tsp) salt
pinch pepper
5 g (1 tsp) paprika
5 g (1 tsp) dry mustard
15 g (1 tbsp) sugar
15 ml (1 tbsp) Worcestershire sauce
100 ml (4 fl oz) tomato ketchup
100 ml (4 fl oz) water
100 ml (4 fl oz) cider vinegar
50 g (2 oz) finely chopped onion
1 clove garlic, finely chopped

method

1. Preheat the oven to 175°C (350°F) Gas 4.

2. Heat the vegetable oil in a flameproof casserole.

3. Add the rib pieces and brown on all sides.

4. Pour off the fat.

5. Add the remaining ingredients to the casserole.

6. Cover and bake for 2 hours.

7. Remove the cover for the last 30 minutes.

8. Arrange on a dish with parsley and serve.
