Ground Beef Curry

ingredients

serves 4 - 6
15 - 30 ml (1 - 2 tbsp oil
1 large onion, sliced
1 clove garlic, crushed
675 g (1 1/2 lb) lean minced beef
10 g (2 tsp) ground coriander
10 g (2 tsp) ground cumin
5 g (1 tsp) turmeric
2.5 g (1/2 tsp) ground ginger
salt
15 g (1 tbsp) cornflour
100 ml (4 fl oz) water
300 ml (1/2 pt) yogurt

method

1. Heat the oil, add the onion and garlic, and cook until they have just softened but not browned.

2. Add the beef, a little at a time, and brown it well.

3. Drain off any excess fat which may accumulate.

4. Add the spices and salt and stir them in well.

5. Cook for 5 minutes, stirring constantly.

6. Mix the cornflour with the water to a smooth paste.

7. Add to the meat, together with the yoghurt.

8. Stir well, cover and cook for 25 minutes on a gentle heat.

9. Serve with rice and usual curry accompaniments.
