Hamburgers with Spicy Tomato Sauce

ingredients

serves 4
450 g (1 lb) lean minced beef
1 onion, peeled and finely chopped
1 green pepper, seeded
20 g (2 tbsp) fresh breadcrumbs
1 egg
5 ml (1 tsp) Worcestershire sauce
salt and freshly ground pepper

for the sauce

5 ml (1 tsp) oil
1 clove garlic, crushed
1 carrot, scraped and grated
1 onion, peeled and finely chopped
1 chilli pepper seeded and chopped (optional)
200 g (7 oz) canned peeled tomatoes
150 ml (1/4 pt) stock or water
bay leaf
2.5 g (1/2 tsp) oregano

method

1. Put the meat in a bowl with the very finely chopped onion.

2. Chop the pepper into very small dice.

3. If you prefer, both onion and pepper can be chopped in a blender.

4. Add the breadcrumbs. Mix with a beaten egg and add the Worcestershire sauce and seasoning.

5. Divided the mixture into 8 pieces and shape into rounds.

6. A scone or pastry cutter is ideal for this purpose.

7. Place on a tray in the refrigerator to chill while making the sauce.

8. To make the sauce heat the oil in a saucepan and cook over a low heat for 4 minutes.

9. Add the garlic and grated carrot.

10. Stir well and then add remaining ingredients. Season well.

11. Simmer for at least 20 minutes on a low heat.

12. Brush the beefburgers over with oil and grill under a high heat for 4 minutes each side.

13. If you like beef well cooked give the burgers a further 3 minutes.
