1. Soak the bread in the water, squeeze out and crumble.
2. Mix all the ingredients together thoroughly, seasoning with plenty of salt and pepper.
3. Pack into a large souffle dish leaving a slight hollow in the middle.
4. Cover with foil and bake for 40 to 50 minutes at 190°C (375°F) Gas 5. until cooked through, but still slightly pink in the middle.
5. While it is still hot, put a plate slightly smaller than the baking dish on top of the foil and weight it with some heavy cans.
6. Leave until cold and firm, remove the weights and refrigerate until needed.
7. Slice into wedges and serve in its cooking dish.
Variation This can also be served hot. There is no need to weight it.
Shaped into patties, rolled in seasoned flour and fried, grilled or barbecued, this mixture makes sensational hamburgers!
