Mushroom and Herring Salad

ingredients

serves 6 - 8
575 g (1 1/4 lb) beetroot. cooked and diced
450 g (1 lb) new potatoes. cooked and diced
450 g (1 lb) canned pear sections, drained and cut into small pieces
1 kg (2 lb) bottled herring pieces, drained
2 medium onions, finely sliced
250 ml (8 fl oz) red wine vinegar
2.5 g (1/2 tsp) black pepper
good pinch salt
75 g (3 oz) mushrooms. quartered
450 ml (16 fl oz) sour cream
125 ml (4 fl oz) white wine

method

1. Toss all the ingredients together in a large mixing bowl.

2. Cover and chill for at least 3 hours before serving.
