1. Peel the zest from both lemons and place with artificial sweetener equivalent to 7-8 tablespoons of sugar in a bowl. Pour over the boiling water, add a large sprig of mint and leave until completely cold.
2. Strain the water into a large jug. Squeeze the juice from the lemons and stir into the jug. Serve with ice cubes and decorate with fresh sprigs of mint. Makes just over 1 pint (600 ml).
