1 tbsp oil
1 onion, chopped
1 garlic clove, crushed
1 tsp ginger puree, or 2.5 cm piece of fresh root ginger, peeled and chopped finely
125 g extra lean mince
1 tbsp medium curry paste
230 g can of chopped tomatoes
50 g frozen peas
1 tbsp crispy onions topping
150 ml water
method
1. Heat the oil in a saucepan, and fry the onion, garlic and ginger until soft.
2. Add the mince and brown quickly. Add the curry paste and cook for 1 minute more.
3. Add the remaining ingredients. Cover and simmer for 15 minutes before serving.
