method
1. Trim the endive and wash well, keeping the heads whole.
2. Wrap each endive in a slice of gammon and put to one side.
3. Melt the margarine in a small heavy-based saucepan, add the onion and stir-fry for 3 - 4 minutes. Remove from the heat.
4. Lay the ham and endive on top of the onion, squeeze the juice from the orange and pour it into the saucepan. Bring to the boil, cover and reduce the heat to as low as possible. Do not add salt to the recipe as there is sufficient in the gammon. simmer for 35-40 minutes.
