1 teaspoon vegetable oil
1 clove garlic, finely chopped
1 onion, chopped
1/2. teaspoon ground coriander
1/2. teaspoon ground cumin
3 oz (90 g) split red lentils
16 fl oz (480 ml) vegetable stock
salt and pepper
2 sprigs of fresh coriander
method
1. Heat the oil in a small saucepan and stir-fry the garlic and onion for 2 - 3 minutes.
2. Stir the spices into the saucepan and mix in the lentils and stock.
3. Bring to the boil, stirring occasionally. Reduce the heat, cover the saucepan and simmer for 15 - 20 minutes.
4. Pour the lentil mixture into a blender or food processor and process until smooth.
5. Return to a clean saucepan and adjust the seasoning, adding salt and pepper to taste. Pour into two warm bowls and garnish with the fresh coriander.
