You can use a jar of pickled herring or any other herring you can obtain at a delicatessen.
ingredients
3 salt herrings, filleted and very finely chopped
2 large cooked potatoes, very finely chopped
1 large cooked beetroot, very finely chopped
1 large cooking apple, peeled and very finely chopped
1 large pickled cucumber, very finely chopped
150 ml (1/4 pt) sour cream
watercress to garnish
method
1. Combine all the ingredients and mix well.
2. Pack the mixture into a small ring mould if you like and refrigerate it until required.
3. Unmould it and put some watercress in the centre of the ring.
