method
1. Heat the oil, add the onion and cook until it has softened but not browned.
2. Add the flour and stir it off the heat until smooth.
3. Add the tomatoes and wine.
4. Break the tomatoes up a little and cook gently for a minute.
5. Add the ham and let it warm through. Stir in the sour cream and season with pepper to taste.
Variation Serve on a bed of noodles, with 45 g (3 tbsp) grated Parmesan sprinkled over the top and flash it under a hot grill just to brown the top.
