method
1. Coat the pork with cornflour and set aside.
2. Heat half the oil in a wok or large frying pan, and add the onion and ginger.
3. Stir-fry for 1 minute, then add the mushrooms and water chestnuts and stir-fry for another minute.
4. Add half of the soy sauce, fry for 30 seconds, then remove the vegetables to a plate.
5. Wipe out the wok or pan, add the remaining oil and heat.
6. Add the meat, and stir-fry over high heat to separate the pieces and brown evenly.
7. After 2 minutes, add the remaining soy sauce, the sherry, hoisin sauce and all the vegetables.
8. Stir-fry for 2 minutes, then transfer to a serving dish and serve immediately sprinkled with sesame seeds.
