6 pork spare rib chops cut into individual ribs
45 ml (3 tbsp) olive oil
2 cloves garlic, crushed
15 g (2 tbsp) parsley, chopped
150 ml (1/4 pt) red wine
150 ml (1/4 pt) strong black coffee
45 ml (3 tbsp) honey
salt and freshly ground black pepper
grated rind and juice of 1 lime
1. Put the spare ribs in a large shallow pan. Mix all the remaining ingredients together and pour over the spare ribs. Leave to marinate overnight, turning occasionally.
2. Remove the ribs from the marinade. Put under a preheated grill, turning until evenly browned.
3. Put ribs back into the marinade and bake for 30 minutes at 180°C (350°F) Gas 4.
4. Remove the ribs and skim the fat off the sauce.
5. Serve with rice.
