Tarama Salad

ingredients

serves 6 - 8
3 large potatoes
45 ml (3 tbsp) milk
100 g (4 oz) red caviar or smoked cod's roe
90 ml (6 tbsp) water
50 ml (2 fl oz) lemon juice
1 small onion, finely chopped
150 ml (6 fl oz) olive oil

method

1. Peel and dice the potatoes. Cook them in boiling water until very soft, about 20 minutes.

2. Drain the potatoes and put them into a mixing bowl.

3. By hand or with an electric beater, mash the potatoes, slowly adding the milk, until smooth.

4. Add the caviar or cod's roe and water to the potatoes. Mix well.

5. Add the lemon juice and onion to the mixture and mix briefly.

6. Slowly beat in the olive oil.

7. Continue to beat until a smooth paste is formed.

8. Serve with cucumber and tomato slices and warmed pitta bread.
