If Stilton is not available use any other mild blue cheese such as Roquefort or Danish Blue.
ingredients
225 g (8 oz) Stilton or blue cheese, crumbled
50 g (2 oz) unsalted butter, softened
30 ml (2 tbsp) port
45 ml (3 tbsp) Mayonnaise
freshly ground black pepper
4 pecan halves
method
1. Mash together or process the cheese, butter and port until smooth.
2. Quickly mix in the mayonnaise and a little pepper.
3. Taste for seasoning, then spoon into four small individual dishes.
4. Press a pecan half on top of each, then cover and chill.
