This recipe is Gluten free, Wheat free and Dairy free.
ingredients
1.5 kg (3.3 lb) 10 1/2 cups of sweet potatoes, peeled and chopped
The grated rind and juice of 2 large oranges
Salt and freshly ground black pepper to taste
1 heaped tablespoon of Dairy free margarine
Freshly grated nutmeg to taste
method
1. Remove any blemishes from the potatoes and then cook in boiling salted water for 20 minutes or until very soft.
2. Turn off the heat and drain them.
3. Return to the saucepan and mash the potatoes with all of the remaining ingredients until light and fluffy and without lumps.
4. Transfer to a warm serving dish and keep warm until needed.
