1. Mix together the breadcrumbs, spring onions and walnuts.
2. Beat the cheeses together and gradually stir in the breadcrumbs, spring onions and walnuts.
3. Add the egg and parsley and bind the mixture together.
4. Divide the mixture into six even-sized pieces and, using your hands, shape into croquettes.
5. Heat the oil in a small frying pan, add the croquettes and cook for 10 - 15 minutes, turning occasionally until golden brown and heated through.
